Adding banana to the porridge makes it nice, sweet and creamy! Paired with spiced yoghurt, roasted nut butter, lots of bright fruit and crunchy nuts! One of my favourite colourful porridge bowls!
Ingredients - serves one
50g quinoa flakes
200ml almond milk
a pinch of salt
1 tsp white chia seeds
half a banana, mashed
0.5 tsp vanilla extract
half of a banana, sliced
1 fig, diced
30g full fat live yoghurt mixed with 0.12 tsp cinnamon and 0.5 tsp honey
3 tsp freeze dried blackberries
2 tsp toasted pistachios, chopped
1 tbsp peanut butter
Pour the porridge ingredients into a small pan and stir over a low heat until thickened.
Pour into a bowl.
Arrange the sliced banana down one side of the bowl and scatter the fig alongside.
Dollop the yoghurt and peanut butter on the other side of the bowl.
Scatter the toasted nuts and blackberries in the remaining gaps.
