I love a smoothie in the morning, especially in the summer! It's cooling, refreshing, nourishing and incredibly satisfying when filled with healthy fats and topped with all the good stuff! It's basically an ice cream sundae for breakfast! Sounds good eh?
If you can't find coconut creamed, use the hard part off the top of a can of full fat coconut milk.
It's hard to find frozen strawberries, so buy some, remove the stalks and freeze them whilst they're in season.
Ingredients - serves one
100g frozen bananas
100g frozen strawberries
20g coconut creamed
1 tbsp light tahini
90ml cashew milk
a heaped spoonful of almond butter
a handful of your favoruite berry granola/a mixed handful of activated nuts, seeds, coconut, buckwheat, freeze dried strawberries etc.
1 large strawberry, chopped
a spoonful of hemp seeds
a piece of raw chocolate, finely chopped
a small handful of coconut flakes
Blend the first set of ingredients in a high speed blender until smooth, thick and combined.
Scoop the smoothie into a bowl and level with a spoon.
Dollop on the almond butter.
Scatter over the strawberries and granola/mixed activated nuts etc.
Sprinkle over the hemp, chopped chocolate and coconut.
