You know I love creating unusual but irresistible porridge toppings and flavours. This one is up there with usual but incredible and of course irresistible. Enjoy guys.
Ingredients - serves one
1 tsp coconut oil
1 pear, diced
0.25 tsp fennel seeds
1 tsp maple syrup
10g buckwheat flakes
40g quinoa flakes
a pinch of salt
200ml almond milk
2 tsp maple syrup
40g coconut/cashew/vegan yoghurt mixed with 0.5 tsp flax
1 tsp freeze dried blackberries
1 tbsp roasted hazelnuts, chopped
Melt the oil in a small pan, add the pear, fennel and maple and fry until golden.
Pour into a bowl and pop to one side.
Pour the porridge ingredients into a small pan, stir over a low heat until thickened.
Pour the porridge into a bowl.
Dollop the yoghurt on one side of the porridge and scatter the pear over the other.
Sprinkle over the toasted nuts and blackberries.
