Rosemary, Cranberry and Chocolate Chip Cookies


Morning! Sorry for hardly posting recently, its been a hectic few months! However, I think these cookies will make up for it. Festive, spiced, unique and incredibly delicious and comforting. The perfect christmas bake for you and your guests to enjoy… if they last that long!


Ingredients - Makes 20

100g white spelt flour

100g rye flour

100g coconut sugar

1 tsp baking powder

0.5 tsp bicarbonate of soda

0.25 tsp salt

1 tsp dried rosemary

60g dried cranberries

75g melted dairy free butter or coconut oil, left to cool

1 egg

70g chocolate chips - my orange range works well!

1 tbsp water


Preheat the oven to Gas mark 5 and line two trays with parchment.

Mix the first set of ingredients together in a large bowl until combined.

Stir through the egg, water, chocolate chips and cooled melted butter/oil and then shape into 20 golf balls with your hands, flatten slightly and pop spaced apart on the lined tray.

Bake for 12 minutes or until golden, remove from the oven and leave to cool and harden slightly.

Then pop on a wire rack to cool fully.

Keep in a sealed box.
