Hello, I've decided to carry on with the sweet treat theme and share one of friends favourite ever bake of mine, my peanut butter blondies. I made these for her birthday and she was so impressed, I think she ate four in one sitting, took two home and then I took more to London that weekend for her! She was impressed to say the least. I think you will be too. Enjoy.

Ingredients - cuts into 16 squares
Dry -
145g ground hazelnuts - or use more ground almonds
55g ground almonds
60g buckwheat flour
50g coconut sugar
Wet -
175g crunchy peanut butter
50g coconut oil, melted
75ml maple syrup
25g coconut nectar
1 tsp vanilla extract
200ml almond milk
90g frozen blueberries
Topping -
1 banana, sliced
Method
Preheat the oven to 180 degrees and line a square tin with parchment.
Blend the dry set of ingredients in a food processor until combined.
Pour in all the wet set of ingredients except the blueberries and blend until smooth.
Fold through the blueberries and pour into the lined tin.
Top with the sliced banana.
Pop in the oven for 40 - 50 minutes or until golden and cooked through.
Remove and leave to cool and then cut into 16.
