Cardamom, Miso and Coconut Porridge


Well the hot weather was nice whilst it lasted but now we are for sure back to warm porridge bowls! This little quirky bowl of goodness has so many textures and flavours that compliment one another. It's comforting yet exciting and incredibly delicious. Enjoy xx


Ingredients - serves one

Porridge -

50g quinoa flakes

200ml almond milk

1 tsp brown rice miso

1 tbsp coconut milk powder

1 tsp maple syrup

0.25 tsp cardamom

Apple -

1 tsp butter

1 apple, diced

Toppings -

2 tbsp coconut yoghurt

1 tbsp roasted hazelnuts, chopped

1 tsp coconut nut butter

1 tsp almond butter

1 piece of chocolate, chopped - I used my orange range



Fry the apples in the butter in a small pan until golden and then pop to one side.

Pour the porridge ingredients into the pan and stir over a low heat utnil thickened.

Pour into a bowl.

Dollop the yoghurt and nut butters on one side and scatter the apples on the other.

Sprinkle the nuts and chocolate down the middle.

Dig in!
