Hello, hello. hello. I hope you are all feeling refreshed after an absolutely gorgeous bank holiday weekend. I don't think I'm quite feeling refreshed yet, sleepy more than anything and in holiday mode haha! But I'm sure I'll be back to normal tomorrow once I'm used it being a working week! As the weather has dipped a little, I've been mixing things up with a few different porridge bowls. This ones fruity, refreshing and seasonal. I've used my lemon praline bar for a little indulgence and melting choc goodness. I hope you love it!
Ingredients - serves one
50g quinoa flakes
200ml cashew milk
1 tbsp almond butter
half a lemon, zested
half a small clementine, zested
1 tbsp fresh lemon juice
1 tsp maple syrup/honey
50g blackberries, sliced
2 tbsp coconut yoghurt
1 tbsp toasted pistachios, chopped
1 piece of my lemon praline bar, finely chopped
Place the porridge ingredients into a small pan and stir over a low heat until thickened.
Check for sweetness, add more if needed and then pour the porridge into a bowl.
Dollop the yoghurt on one side of the porridge bowl and pour the sliced blackberries over the other.
Scatter the toasted pistachios and chocolate down the centre of the bowl.
