Ooooh isn't this weather just lush! As promised I've switched from comforting bowls of porridge for cool, creamy and satisfying smoothie bowls. This one is probably my favourite smoothie I've made this year. A blend of cardamom, mango and vanilla for the most delicious, comforting yet refreshing bowl of goodness. Topped with my peanut chocolate granola as both cardamom and mango go perfectly with chocolate, salty almond butter, toasted buttery and crunchy coconut and a few raspberries for a lush colour and tart contrast. Ingredients - serves one
120g fresh mango, diced
1 banana, sliced
1 scoop of vanilla vegan protein
1 tsp cardamom
2 handfuls of ice
1 tbsp almond butter
1 tbsp my NEW chocolate granola - buy here
1 tbsp toasted coconut flakes
4 frozen raspberries, crumbled.
Blend the smoothie ingredients in a high speed blender until silky smooth.
Scoop into a bowl.
Dollop on the almond butter and scatter over the granola, coconut flakes and raspberries.
