Can't beat granola in the summer months. Simply with milk or yoghurt or scattered over your smoothies, overnight oats, ice cream and more. This ones super bananary and incredibly nutty and delicious. The chocolate chips add a gorgeous touch and indulgent feel. Try my peanut praline bars for the ultimate combo!
250g quinoa flakes
200g walnut pieces
2 tbsp white chia seeds – black will do just fine
160g mashed ripe banana – about 2 large bananas
45g coconut oil
40g maple syrup
1 tsp vanilla extract
0.25 tsp salt
50g crunchy peanut butter
Stir through 100g chocolate chips - I used two of my peanut praline bars.
Preheat the oven to Gas mark 4.
Pour the dry set of ingredients into a baking tray.
Mash together wet set of ingredients until combined and smooth.
Pour the wet into the dry and mix well.
Pop in the oven for 45 minutes – stiring every 10 until golden and crisp.
Remove from the oven and leave to cool.
Stir through the chocolate chips before pouring into a jar.
Keeps for a couple of weeks.
