Porrrrrrrrrrrridge! Yeah I know, It's still sunny.. but bilberries are in season, so it would be rude not to eat them and my favourite ever way to enjoy them is in porridge! So I just had to create a recipe for you. Don't worry though, if you can't get your hands on bilberries, use blueberries! They'll do the trick xx
Ingredients - serves one
50g quinoa flakes
0.5 tbsp black tahini or normal
0.5 tsp cinnamon
a pinch of salt
200ml almond milk
1 tbsp maple syrup
1 banana, sliced
25g coconut yoghurt mixed with 0.5 tsp black tahini
1 tbsp frozen billberries or blueberries
1 tsp toasted almonds, chopped
1 tsp toasted macadamia nuts, chopped
1 tsp cacao nibs
1 tsp chopped mint
0.5 tsp honey/maple syrup
Pour the porridge ingredients into a small pan and stir over a low heat until thickened and combined.
Pour the porridge into a bowl.
Arrange the sliced banana down one side of the bowl.
Dollop the tahini yoghurt alongside and scatter over the bilberries.
Sprinkle the nuts, nibs and mint in the gaps.
Drizzle with honey/maple to finish.
