Afternoon. Sorry for the week of no recipes, I was on holiday and then It was my 21st, so I took a few days off to chill and spend time with my family and friends. This week has been super busy, catching up on everything and developing ideas and packaging for Leitchy Creates. It's all super exciting. I've been making lots of hearty and nourishing meals to fuel me through my busy mornings, this was one. Simple quinoa porridge with juicy and sticky fried orange, creamy yoghurt and crunchy almonds. Delicious. Enjoy.
50g quinoa flakes
a pinch of salt
200ml almond milk
1 tsp maple syrup
1 large orange, peeled and sliced
half a tbsp olive oil
To serve -
2 tbsp vanilla coconut yoghurt
1 tbsp toasted almonds, chopped
2 mint leaves, finely chopped
maple syrup to drizzle
Drizzle the oil in a frying pan, when hot add the orange slices and fry over a medium heat until slightly golden on each side.
Meanwhile, pop the porridge ingredients into a small pan and stir over a low heat until thickened. Check for sweetness and then pour into a bowl.
Dollop the yoghurt on top of the porridge bowl.
Arrange the orange slices over the top of the porridge bowl.
Scatter over the almonds and mint leaves.
Drizzle with sweetener.
