It's bread week on The Great British Bake Off tomorrow so I've made some bread all in the spirit of the show! Who's is going to play along with me too? This is a homemade gluten free loaf. Using sweet potato to keep it nice and moist and sandwich bread like. Perfect for any time of day! I love mine with eggs or toasted with almond butter and banana slices. It's also yummy sandwich style and taken on the go and even dipped in soups and stews! Enjoy, LC x
200g sweet potato, peeled and cubed
170g ground almonds
30g ground flaxseeds
40g chickpea flour/plain flour
a pinch of salt
1 tbsp apple cider vinegar
0.5 tsp bicarbonate of soda
3 eggs, whisked
55g coconut oil, melted
110ml dairy free milk - I used cashew
Seeds of choice to decorate - I used linseeds
Boil the sweet potato in a pan of water for 10 - 15 minutes or until soft. Drain and mash until smooth.
Preheat the oven to 180 degrees and line a loaf tin with parchment.
Mix the mashed potato, almonds, flax, flour, salt, vinegar and bicarb together in a bowl.
Stir through the whisked eggs, cool oil and milk.
Pour the bread mix into the lined tin.
Sprinkle over some linseeds.
Pop in the oven for 1 hour or until golden and cooked through.
Leave to cool before slicing and freezing or keep in the fridge for 3 days.
