Cinnamon Porridge with Fried Banana and Candied Walnuts


Porridge season should be long gone by now but I’m afraid it won’t stop raining in England so porridge is here to stay for a little while. Hopefully this bowl will make you feel better about the English weather.



Porridge -

50g oats

1 tsp ground flaxseeds

0.5 tsp organic ceylon cinnamon

a pinch of salt

200ml carton coconut milk or any milk

Fried banana -

1 tsp coconut oil

1 banana, sliced

Walnuts -

a handful of walnuts

1 tsp maple syrup

Toppings -

1 tsp hemp seeds


Start by toasting the walnuts in a dry non stick pan over a medium heat until golden. Turn off the heat, stir through the maple syrup until its absorbed and all the walnuts stick together. Pour them into a bowl and pop to one side.

To fry the banana, melt the oil in the same pan over a medium heat, add the sliced banana and fry until golden, flip and fry until golden on the other side. Tip into a bowl and pop to one side whilst you make the porridge.

To make the porridge, pour all the porridge ingredients into the same pan you’ve been using. Stir over a medium heat until thickened. The thickness of your porridge will depend on what you prefer.

Once the porridge is at your desired consistency, pour the porridge into a bowl. Top with the fried banana, candied walnuts, hemp seeds and a drizzle of maple!
