Coconut and Cardamom Porridge with Grilled Banana


Hello guys! Warning, I will be sharing more porridge recipes than you can manage over the next few months as its my favourite dish ever! The ultimate comfort food and incredibly versatile and satisfying! This one will win anyones heart over, especially your own! Give it a go and let me know what you think x


Ingredients - serves one


Porridge -


50g quinoa flakes

200ml almond milk

1 tbsp coconut milk powder

0.5 tsp cardamom

1 tsp maple syrup


Toppings -


1 banana, halved lengthways and widthways


1 tbsp roasted pistachios, chopped

1 piece of chocolate, chopped


a pinch of cranberry powder for decoration



Preheat a grill to high and line with foil.

Grill the banana on the lined grill until golden.


Meanwhile pour the porridge ingredients into a pan and stir over a low heat until thickended.


Pour into a bowl.


Pop the golden grilled banana on top of the porridge in a pile and then scatter over the pistachios and chocolate.


Decorate with a pinch of cranberry powder if using.
