Chocolate Porridge with Plum Compote

If you follow my recipe account, you'll know I'm obsessed with porridge. I don't go a morning without a steaming bowl of porridge and they're never the same! I like to vary the textures, flavours and colours as much as possible. As it's getting cooler and darker, I thought you'd like a little porridge recipe to get stuck into too. So comforting and indulgent. Just what you need first thing in a morning to wake up too.

Ingredients - serves one

Compote -

55g plums, chopped

1 tsp maple syrup

Porridge -

50g quinoa flakes

1 tbsp cacao powder

pinch of salt

200ml almond milk

1 tsp maple syrup

Toppings -

2 tbsp coconut yoghurt

1 tbsp crunchy almond butter

a quarter of an apple, finely sliced and cut into sticks

0.5 tsp toasted pumpkin seeds

0.5 tsp toasted sunflower seeds

Pop the compote ingredients into a small pan over a low heat with a splash of water, boil until soft enough to mash into a puree and then leave to thicken slightly.

Pour the porridge ingredients into another small pan and stir over a low heat until thickened.

Pour into a bowl.

Dollop the almond butter and yoghurt on one side of the porridge bowl and then pour the compote onto the other.

Top with the apple sticks and toasted seeds.
